Whole Wheat Cranberry Pancakes

Just before Thanksgiving, Joshua's preschool teacher made this for snack. They're awesome!

Whole Wheat Cranberry Pancakes

Ingredients
1/2 cup flour
1/2 cup whole wheat flour
2 tsp. sugar
1/2 tsp. salt
1/2 tsp. baking powder
1/4 tsp. baking soda
3/4 cup buttermilk
1/4 cup milk (plus 1 Tbsp if too thick)
1 egg separated
2 Tbsp butter, melted
Vegetable oil for the pan
1 cup fresh/frozen cranberries
2 Tbsp sugar

Directions:
1. In food processor or coarsely chop, then set aside the cranberries and 2 Tbsp sugar.
2. Mix dry ingredients
3. Combine buttermilk and milk; whisk in egg white
4. Mix melted butter and egg yolk
5. Comine all wet ingredients
6. Whisk whet ingredients into dry ingredients
7. Add cranberry/sugar mixture
8. Cook 2-3 minutes first side; flip; 1-2 minutes more (medium-high heat).

My mother-in-law tried making egg nog pancakes for us one Christmas and it didn't out so well. Your cranberry ones sound like they'd work out better. :)
